You may think today is April 3. OK, it is. But it’s also Whole Grain Sampling Day, a celebration organized by the Whole Grains Council. And you may have noticed, I’m a fan—I almost never miss a chance to swap in whole wheat flour, and this blog’s got recipes using cornmeal, wheatberries, oats, freekeh, brown rice, farro… Heck, I’ve got a whole category devoted to whole grains.

So when the good folks at the Council asked if I’d like to help them spread the word about whole grains’ nutrient-dense deliciousness, I didn’t hesitate. I agreed to host a giveaway of the incredible assortment you see above.

And then I forgot to write a recipe post.

Whole grains are such a regular part of my everyday life, it never occurred to me to record all the wonderful grain-based things I’ve cooked over the last few weeks. Now here we are, on the official day, and I’ve got nuthin.

Except an amazing giveaway.

    Hmm, so hard to choose! I would say that our current favorite is whole grain stoneground cornmeal – adds such a delicious nutty bite and flavor to pancakes, waffles, bread, biscuits, even cake! 🙂

    My favorite whole grain is farro. I usually make farro “salads” with seasonal veggies. Recently I’ve been using it in place of rice. So delicious and just enough bite.

    My favorite grain du jour is freekeh. I make it like a pilaf and serve as a side dish. I soak it for an hour or so, if I have the time and then saute it in some margarine, just until it’s lightly toasted, add water/stock and cook until tender. I love its chewy texture and nutty flavor.

    I’ll add whatever veggies I have on hand. Mushrooms and onions go especially well with it.

    Mine would be oats since I’m currently breastfeeding and they are fantastic for my supply. I make steel cut oatmeal with coconut milk for breakfast – yummy and sweet! When I need a change of pace, I go for a ris-oat-o of steel cut oats cooked risotto style with chicken broth, Parmesan, and asparagus.

    Quinoa – although botanically a seed, but usually falls into the whole grain category. I love how it cooks so fast for dinner dishes and the endless types of variations you can make, depending upon what you add to it – nuts, veggies, cranberries, cheese, etc.

    Farro – it’s healthy but so versatile. I use it in soups, risotto or salads and the kids think they’re eating rice!

    We eat steel cut oats almost every day. I love seeing my 1 and 3 year old boys excitedly shoveling big bites with loads of frozen berries into their mouths. They request it every weekday morning.

    Oats! Besides plain old oatmeal, I love to grind them up and use them in place of flour for pancakes and waffles and all kinds of other things when baking.

    Oats. I have granola in the morning, make a no-sugar banana chocolate chip cookie with them, blend them into smoothies for my boys, etc.

    I love steel cut oatmeal mixed with barley for breakfast. You soak it overnight so you don’t have to cook it forever, then microwave it. I eat it with blueberries and soy milk. Yum.

    My second favorite is Trader Joe’s brown basmati rice. I use it for all my rice dishes. (The best is a vegetable biryani.)

    I love making a mushroom “risotto” using barley. We have also just started grinding our own whole wheat flour and the bread we made has gotten amazing.

    Quinoa. I got introduced to it via a recipe where you kind of cook it like rissotto. Toast it dry with onion and garlic for about 5 min, then add chicken stock a little at a time, until the little tails pop out. Add a bag of frozen edamame (that you’ve defrosted by running under warm water) and some dried cranberries. Season with salt and pepper. Yum!

    We love a lot of different whole grains, but whole wheat flour is our favorite. We use atta flour to make chapatis, pita, and sangak bread.

    I love oats, but I gotta say that I love buckwheat as well. I love soba and even my 1 1/2 yr old likes them with a savory peanut sauce. We also both like blueberry buckwheat pancakes.

    So I guess I would pick barley- I’ve got a great recipie for a Thai salad with barley, red peppers and spinach…so tasty!

    My favorite is steel-cut oats and they are great in every way imagine imo. Sweetened with honey, with milk, savory oats, you can add to baking recipes. I love it! 🙂

    I am very partial to jasmine brown rice. It has this nutty flavor that I like. I cook it with lots of vegetables added both to the cooking water (hard vegetables like carrots plus some browned onions for flavor) and then after like roasted eggplant, bell pepper or zucchini.
