    This sounds like my dream salad, and even something the kids would eat. And I just added polenta to my grocery list this morning! Will have to try this sometime this week.

    Debbie, my kid is allergic to peaches. Could I substitute a mango or some other fruit without screwing up the flavor profile?

    Alissa, I think mango would be a fine sub–just make sure it's ripe but not mushy, kwim? You want it to have enough sweetness to be noticeable, but not verge on candy. Please let me know how it turns out!
