Yummm! I bet some of the oil could be swapped out for unsweetened applesauce for even more virtue. Tried this trick with a whole wheat banana bread recipe (http://www.kingarthurflour.com/recipes/heavenly-healthy-banana-bread-recipe) and it worked out perfectly.

These turned out great. I did make some substitutions though. I only used 1 cup of sugar with no problem, but sprinkled a bit of raw sugar on top before baking. I replaced 1/2 cup oil with applesauce and I used plain yogurt in place of the buttermilk. I also ended up with 24 muffins. I will def be making these again!

Love this! My mother-in-law gave us that well-known ‘deceive your children’ cookbook with ideas about sneaking veggies into food. I was never quite comfortable with idea, and you articulated perfectly why. I’m excited to make these WITH my kids tonight!

Trying to make these today without having to go to the store–can I use all purpose flour or bread flour?

Made these yesterday when my son was home sick from school! They turned out great even though we made some substitutions: flax/water instead of egg, applesauce instead of butter and cinnamon chips instead of white chocolate. Great texture and delicious!
