I’d like to haul out that old chestnut: Great minds think alike. But then I’d be saying that I’m as great as Deb Perelman at Smitten Kitchen, and folks, I know this post in particular pales in comparison.

See, a few weeks ago I experimented with charring corn directly on a gas burner. I loved the results, simply sprinkled with lime juice and chili powder, maybe a teeny bit of salt. Some I stripped from the cob and tossed into tacos and burritos. I was going to tell you all about my discovery.

And then Deb published this recipe for Charred Corn Crepes, which tempered my excitement just a bit. She had the same brainstorm I did, to cook corn on the burner, but then she added a twist of genius.
